As long as you keep the flame no higher than medium it should work. This pan is not for high temperature use or it will lose it’s non stick. Also the handle is strong plastic so it would melt it on a really high heat.

Please ask the manufacturer. Advert says cast aluminum, safe, etc. but as a consumer there is no written indication of cadmium or other toxins.

Acidic foods are not found in my owner's manual. I haven't read of anyone cooking those foods in the Sensarti Skillet. Since I purchased it for frying foods, I don't imagine that I will try cooking acidic foods. Its probable up to you to decide.

I've had no staining in my experience with this pan, so I don't know. The instructions say to never use without a small amount of oil & to let cool completely before washing.
